Benita Naiman, Chef at Food for my Soul, was born and raised in Belize, Central America where she started cooking with her mother as a young girl.  Following are some of her favorite dishes.

Garnaches - toasted tortilla with beans, grated cheese, topped with habanero pepper and onion salsa.
Salbutes - corn tortilla with shredded chicken, lettuce and tomatoes.
Rice and Beans with stewed chicken
Platano - fried slices of plantain.
